



Lindsay Snowden from Sunday Lunchbox introduced us to a relatively new non-profit, originating in Austin in 2020 to operate with the goals of Dignity, Agency, Equity, Real and Delicious, and Zero Waste. They serve the 14.4% of Travis County who experience food insecurity, and since 2020 they have provided 57,000 servings of food to approximately 132 children per week. Their goal for the current year is to rescue 20,000lbs. of local produce from a landfill and serve 100,000 meals. Operating from the founder’s garage, they accept produce from local farms, predominately Farm Share Austin and Urban Roots. On Saturdays, they inventory the week’s donations and pack bags according to the orders received from their families. Then on Sundays they deliver the bags via both volunteer drivers and Door-Dash which gives them a reduced rate. Following the underlying goal of no waste, this organization allows the families to express what they need and want, rather than distribute food randomly that does not meet the family’s tastes or culture. Bumped and bruised produce is cooked, mixed with rice, dehydrated, and packaged—later to be reconstituted to a nice meal by adding one cup of water and microwaving. With a shelf life of at least a year, this “Stroodle” is a perfect way to save produce that would otherwise be sent to the landfill. Another product is blending vegetables and spices to make a Sauce. “Snakrs” are made from sliced fruit and vegetables dehydrated to produce crispy snacks acceptable to all ages. And finally various vegetables are blended into an appetizing smoothie called the “Green Machine.” A very interesting program incorporating caring and compassion, common sense and creativity, volunteerism and cooperation.
